We celebrate our first birthday, with our second official event, on December 29 at Tenuta Monacelli.
We have chosen this location because it represents and embodies our way of doing tourism, a slow tourism for those who appreciate and respect nature, the territory, the Salento countryside and the mammoth olive trees surrounded by dry stone walls.
For us, this has been a magical year: we have met new Foodisti friends and told their stories without filters, au naturel, without palm oil, as our claim suggests.
Foodismo’s award: a gesture of gratitude to those who work to promote the land
We conceived this event for those who follow us and espouse our philosophy: to work to promote the Salento territory, support small producers and, for the occasion, help those who suffer and those who have no voice to cry out for help.
The poor and marginalized of Don Antonio Coluccia’s Don Giustino Onlus community and the suffering and little friends of Don Gianni Mattia who, with the humanization of care in hospitals, makes the stay of these little guests decidedly more comfortable.
Roots: this is the leitmotif of the evening
Roots represent our DNA, there is little we can do about it. Those born in Salento are firmly anchored to their homeland. This is the story of those who move away from home for a long time, dreaming, however, to return within the walls of their home. With a long journey: physical, mental, emotional.
This is our story and we know very well that the strong bond with the land always wins over everything.
For this reason, we thought to tell you, through a 5-course tour, what the journey to Salento represents for us: the flavors of the land, the scent of the seas (Adriatic and Ionian), the taste of memories, the country life, the joy of simplicity.
The importance of teamwork: globetrotting chef Ivan Tronci interprets the Salento tour through the flavors of the land
The trip to Salento you are about to take is the work of the skilled hands of our chef ambassador, Ivan Tronci and his very young brigade.
The chef has reinterpreted the flavors and knowledge of a territory, telling its story with immediacy, through incredibly unique nuances of taste.
A finger-food and a glass of bubbles will welcome you, and the rest will be a continuous crescendo, in terms of intensity of flavors and goodness of the dishes.
You will range from the flavors of the seas to the goodness of the hinterland, and close the dinner with the dessert of memories.
Wine pairing: Negroamaro in all its nuances
Every self-respecting wine and food tour is the result of a winning food-wine pairing.
For the occasion, we will tell you about the territory through all the possible shades of Negroamaro from Salento: in bubbles, in white, in rosé and in red. Different outfits for a single grape variety.
“Duca Carlo Guarini – Azienda Agraria Biologica” wines will accompany all our diners by the hand during this journey of discovery of Salento.
Acknowledgements
We would like to thank the Duca Carlo Guarini company for the Piccole Bolle, Tenuta Castellana for its extra virgin olive oil, Zafferano del Salento for its organic saffron and, last but not least, Azienda Apistica Saverio Alemanno for its pure pomegranate honey.
The study of the pairings is the work of Simposio Divino Salento, in the person of Graziano Caggiano, Ais taster.
